Better in pairs – keep your plates & knife inserts as matched sets
A sharp cutting assembly provides the best texture and definition for your ground product. Rome Grinding Solutions recommends sharpening cutting plates and changing knife inserts every shift, or at a minimum on a daily basis. This is a general benchmark recommendation that is dependent on the amount of product your company grinds per shift or per day. Adjust sharpening schedule as needed for larger/more demanding runs.
Changing inserts out on a regular basis also provides a quality cutting surface that helps keep your cutting assembly running cooler. Dull plates and knife inserts can introduce additional friction and heat to your product, which has the potential to raise the temperature of your product as it is discharged through the plate.
It is highly recommended that the knife and plates are kept together as a matched set. Throughout the production day, the knife inserts and plates will wear together to a married set. Keeping these parts paired together can help your inserts and plates stay sharper, longer.
Finally, alwaysremember to turn off your grinder when not running product. Running a grinder “dry” with no product will drastically reduce the life of your plates and knife inserts.
